Barbecued Snapper Fillet with Black Bean Salsa

  • 4 x 180g snapper fillets
  • peanut oil
  • salt and pepper
  • salsa
  • 2 tomatoes, finely chopped
  • ½ small red onion, chopped
  • 2 tablespoons coriander leaves, chopped
  • 2 tablespoons chinese black beans
  • ½ fresh red chilli, finely chopped
  • juice 1 lime
  • a few drops sesame oil
  • 1 tablespoon light soy sauce

Preparation method

Brush the fish lightly with peanut oil and season with salt and pepper. Cook on a preheated barbecue plate for 5 minutes or until just cooked through.To make the salsa combine all ingredients in a large bowl and season with salt and pepper.

Place the fish onto serving plates, top with salsa and serve with Asian greens.
