Chilli Cashew Crusted Fish

Ingredients

  • 400g firm white skinless, boneless fish fillets
  • 1 cup cherry tomatoes, halved
  • ½ each red and green capsicum, seeded, thickly sliced
  • olive oil
  • rocket, lime wedges, to serve
  • CRUST
  • 1/3 cup chopped raw cashews
  • ¼ cup breadcrumbs
  • finely grated zest and juice 1 lime
  • 25g butter, melted
  • 1 teaspoon sambal oelek
  • 1 garlic clove, crushed

Preparation method

 

  1. Preheat oven to hot, 220°C.
  2. Arrange fish fillets, tomatoes and capsicum in an ovenproof dish. Drizzle with oil and season to taste.
  3. CRUST: In a small mixing bowl, combine all ingredients. Spread mixture evenly over fish fillets
  4. Bake for 15-20 minutes, until cooked through and crust is golden. Serve with rocket leaves and lime wedges.
