2. Combine flour, wheat germ, soda and a pinch of salt in a mixing bowl. Rub in butter pieces using fingertips until mixture is crumbly. Whisk together milk and yolk; add to flour mixture. Cut through mixture with a table knife until mixture forms a moist ball of dough.
3. Knead dough on a lightly floured surface 3 or 4 times until smooth. Roll out to a 30cm square using a rolling pin. Cut into 4cm-wide strips.
4. Wrap strips around saveloys. Arrange dogs, seam side down, on prepared tray. Bake for 12-15 minutes until dough is cooked and golden. Serve dogs warm with sauce.
Bake in the upper third of the oven for best results.
