Easy Pumpkin Soup

Ingredients

  • pumpkin (your serving size of pumpkin depends on number of mouths to feed)
  • 1 can reduced fat evaporated milk
  • chopped parsley
  • pepper and salt, to taste

Preparation method

Cook the pumpkin in boiling water until tender. Drain and mash, gradually adding the evaporated milk until it is a soupy consistency.

Season to taste and garnish with a sprinkle of chopped parsley. Serve with hot toast or croutons.
