1 Wash rice well under cold running water. Drain well and place in a saucepan. Add coconut milk, water and pandan leaves. Bring to a boil, cover, reduce heat and simmer for 15mins, or until liquid has been absorbed.
2 Remove saucepan from heat and fluff rice with a fork or pair of chopsticks. Cover and leave to rest for a further 10-15mins. Serve with a garnish with fried shallots.
