Ingredients

  • 550g Coles Brand beef mince 5 star
  • 175g Coles Brand outdoor bred shortcut bacon
  • 2 tbsp Coles olive oil
  • 1/2 brown onion, finely diced
  • 2 garlic cloves, minced
  • 2 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 4 Tasty cheese slices
  • 4 round rolls, cut in half
  • 2 large iceberg lettuce leaves, cut in quarters

Preparation method

Heat a large sauté pan over medium high heat, add the bacon and cook until crisp and golden brown. Remove bacon to a plate lined with paper towels.

Return same pan to medium high heat, add 1 tablespoon of the oil and sauté the onions for 2 to 3 minutes or until softened. Add garlic and cook for 30 seconds, then remove pan from the heat and let onion cool.

Preheat a barbecue to a medium-high heat.

In a large mixing bowl combine mince with cooled onions, Dijon, Worcestershire, salt and pepper and mix well.

Divide mixture into 4 portions and shape each portion of beef into a pattie.

Brush each beef burger with a little of the remaining olive oil and season with salt and pepper on both sides, then place onto the barbeque. Cook for 2 to 3 minutes then flip burgers, place a slice of cheese over each and cook for a further 2 minutes or until cooked to your liking.

Remove from the barbeque and let rest for 2 minutes.

Brush the inside of each bun with a little of the remaining olive oil and cook on the barbeque until lightly toasted, then remove.

Divide the lettuce among the 4 bun bottoms, place a beefburger on top of each bun with lettuce, top with the bacon and the tops of the buns.
Serve immediately.
