Salsa Cheese Boats

  • 1⁄2 cup low-fat cottage cheese, well drained
  • 1 tablespoon favourite mild salsa
  • 1 small red capsicum, quartered & trimmed
  • 1 large pimiento-stuffed olive
  • Sliced baby cos leaves and carrot sticks, to serve

Preparation method

Combine cheese and salsa. Spoon into capsicum boats. Decorate with olive slices on wooden picks. Serve on cos leaves; garnish with carrot sticks.

Substitute ricotta for cottage cheese if you prefer a smoother texture.
